The Soil

An olive grove older than the country

Miguel Ángel walks between trees his great-grandfather knew by name. The soil beneath them is alive again. And that, he says, changes the taste of everything.

He left a career in graphic arts to take over the family groves in the Marina Alta mountains, switching from conventional dryland farming to regenerative methods that rebuild the soil rather than exhaust it.

Native olive varieties, cover crops and minimal intervention have turned the grove into something closer to a biodiversity project than a plantation.
